Chocolate is one of the most frequently chosen sweets, enjoying even great popularity; not only in Poland, but also throughout Europe. While there are many types of chocolate, the key distinction here is between white and dark (milk). For many, the former does not belong to the segment of real chocolates - only the so-called "Chocolate-like". What it comes from?

Chocolate in the light of the law

The recipes clearly state that white chocolate is one type of chocolate. Hence, it is referred to as "chocolate" and not "chocolate-like product". According to EU standards, its composition must not be complete without cocoa butter (at least 20%), milk or dairy products, sugar, and any additives permitted under Community law. Unlike dark chocolate, white chocolate does not have a non-fat cocoa mass (cocoa mass) corresponding to, among others, for its brown color and specific taste.

Chocolate production

Chocolate is made from ground cocoa beans called cocoa liquor. Squeezed it forms cocoa butter - fat, and transformed into a powder known to all cocoa. Milk chocolate, with a characteristic dark brown color, consists of ingredients carefully combined together with sugar and milk solids (hence the name "milk"). Classic dark chocolate has no milk additives, while white chocolate has no pulp and cocoa powder.

The texture and taste of chocolate

Due to the lack of dairy ingredients, dark chocolate has a more pronounced chocolate flavor. The whole delicacy has a dry, chalky texture and a bitter aftertaste. The dairy solution is a bit more delicate, devoid of the key cocoa bitterness. White chocolate, on the other hand, as it has much more fat, milk and sugar - is creamy, buttery-milky in taste and much more pleasant to the touch.

Black or white - which chocolate is healthier?

Chocolate is one of the healthiest sweet snacks on the market. Dark - without the addition of milk - promotes the reduction of hormones responsible for emotional stress and anxiety. Rich in the flavonoids present in cocoa beans, it has a positive effect on the circulatory system and blood pressure. Just 40 g of dark chocolate a day is enough to notice its clearly positive effect on health.

White chocolate is much poorer in cocoa (it only contains cocoa butter) and therefore is not as healthy anymore. 40 g of this delicacy contains 225 empty calories and a good dose of sugar. Its advantage - apart from the taste - is the lack of caffeine. For this reason, it will work for people who are allergic to this ingredient.
